Kiera's Favorite Snickerdoodle Cookies Recipe

Enjoy this delicious recipe baked just last week in our new kitchen by nourish.NJ Cook, and baking extraordinaire, Kiera Mitru!

(Recipe yields 33 cookies)

1 cup salted butter (2 sticks)

1 1/3 cup granulated sugar

1/3 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

3 1/4 cups All-Purpose flour

1 teaspoon baking soda

3/4 teaspoon Kosher salt

1 1/2 teaspoons cream of tartar

For rolling:

1/3 cup granulated sugar

1 1/2 tablespoons cinnamon

1. Preheat the oven to 350 degrees. Prepare baking sheets with parchment paper.

2. In the bowl of a mixer, cream together butter and sugars until light and fluffy. Be sure to scrape the sides and the bottom of the bowl with a rubber spatula. Add vanilla and eggs and mix until just combined.

3. Whisk dry ingredients together and add gradually to the butter and sugar mixture, once again scraping the bottom and sides of the bowl with a rubber spatula.

4. Use a cookie scoop or spoon to shape the dough. Roll the dough into balls about 1 or 2 inches thick. 

5. Combine sugar and cinnamon and roll dough balls in mixture until coated. Space about 9-12 dough balls out on a prepared baking sheet and bake for 9-11 minutes.
