Ingredients:
2 frozen puff pastry sheets
Flour for dusting rolling surface
For filling:
5 cups of fresh or frozen fruit of choice (Berries, stone fruits and cherries work great)
2 tablespoons lemon juice
2 tablespoons water
1 1/2 cup of granulated sugar
1 egg, beaten for eggwash (optional)
Directions:
1. To make the jam, combine your fruit of choice with sugar, water, and lemon juice in a small saucepan. If the fruit is on the larger side, cut into smaller chunks that are less than an inch in width.
2. Allow mixture to come to a simmer, stirring frequently to ensure it won't boil over.
3. Continue stirring and let mixture simmer until it reduces and becomes thick, about 15-20 minutes.
4. Remove from heat and mash fruit with a potato masher or fork. (Optional)
5. Remove puff pastry from freezer and allow to soften at room temperature for about 10 mins. Preheat oven to about 350 degrees Fahrenheit. Unfold dough onto a lightly floured surface and roll with a rolling pin about 5 times in each direction.
6. Cut the pastry down the middle lengthwise so that you have two long rectangular strips. Cut each strip of dough into 5 pieces so that you have 10 smaller rectangles in total.*
7. Spread jam onto 5 rectangles and cover each with a top layer of pastry. Use a fork to crimp the edges and poke 3-4 holes into the top of the poptart.
8. Place on a parchment-lined baking sheet and bake for 15-20 minutes or until flaky and golden brown.
*For a festive touch, use a cookie cutter in your favorite shape to portion the dough and follow directions accordingly.
